Gluten is a protein in wheat, barley, and rye. It is used as an ingredient in breads, pastas, and cereal but often appears in foods like soups, salad dressings, beer and many other foods as well, including meats, because of his binding and enriching properties.
Why is preserving the gut microbiome so important?
Celiac Disease is an abnormal immune response in genetically predisposed people, caused by gluten fragments. As a result, celiac patients suffer from a variety of symptoms including diarrhoea, bloating, abdominal pain, loss of appetite and, in children, failure of normal growth. Furthermore, this autoimmune response results in the damage of the intestinal lining, causing malabsorption of nutrients and potentially leading to other pathologies such as osteoporosis and cancer.
Gluten also plays a role in a distinct syndrome, called Non-Celiac Gluten Sensitivity.
Gluten-free diet is the only available option to manage these conditions. However, accidental exposure even to small amounts of gluten may cause gastrointestinal symptoms and gut damage even when clinical are not manifested.
